Use the regular remove roof area option found in the architect zone area menu to draw an orange area above the roof you want to remove. Are you sure you are using the remove roof zone and not just removing the build roof zone there are 4 roof buttons in total. You have to leave the walls to prevent the roof fall. Leave some walls from the edge and take away it gently so that the colonist is not filled up.

I think the second approach will let you force a colonists to remove a roof section but i don t think it will generate any tasks to do so automatically. In some places you can not remove the thick roof. Only way i have seen is in dev mode or by removing the walls below it even the rock walls and it will fall down on top of the ground below. You can only give it to fall. The no roof zone will remove constructed and thin rock roofs from the selected tiles. So i try to remove the mountain roofs so they don t collapse by declareing a no roof area but on some tiles it will never be possible to declare that area and if i let the roof collapse and remove the debris it just collapses again presumably forever since i tried removing it 15 times and it still collapsed. Don t remove entire walls if they re the only thing holding up a roof.

You still have to wait for colonists to go and remove the roof segments or you can force them to with a right click on the roof section you want to remove after marking it as a no roof area. They will remove it like any other roof. Do not recomend the second option it is slow and well lets just say high odds of people pancakes which are not good if you like those people but it is good for mining xp.
